Food Payasam (Rice Pudding) Ingredients
4 1/2 cups Milk
2 Tbsp Cashew Nuts
3 Cardamom Pods
3 Tbsp Raisins
1/3 cup Rice
1/3 cup Jaggery syrup
1 Tbsp Ghee
Cooking Procedure
- Bring milk to a boil in a heavy bottom pan.
- Reduce heat and simmer it for 15 to 20 minutes, stirring frequently.
- Remove the seeds from the cardamom pods and crush the seeds.
- Add it to the milk.
- Add the rice.
- Cover the pan and contiue to cook over low heat for about 20 to 30 minutes, until the rice is soft.
- Remove from the heat.
- Stir-in the Jaggery syrup.
- Temper cashew nuts and raisins in Ghee.
- Stir it in the Paysam and serve.
Other Flavours
- A pinch of saffron can also be added for flavour.
- Vermicelli may be used instead of Rice.
- Jaggery syrup can be substituted with Sugar syrup or honey.
- Substitute Condensed milk for milk and use less syrup for better taste.
Tips
- Cook Rice in a pressure cooker with more water in order to make it soft and use this. This reduces cooking time.
- Jaggery pieces can be added directly instead of Jaggery syrup.
